Ingredients

  • 1 Tbsp. olive oil
  • 4 medium onions, chopped (2 c.)
  • 4 garlic cloves, chopped
  • 1 (28 oz.) can plum tomatoes in thick puree or add tomato sauce to tomatoes
  • 2 tsp. leaf thyme, crumbled
  • 2 tsp. sugar
  • 1/4 tsp. salt
  • 4 tsp. pepper
  • 2 lb. string beans, trimmed and halved or 50 oz. canned, drained

Directions

    Heat oil in Dutch oven over medium heat.

    Add onion and garlic. Cook, stirring occasionally, 8 minutes or until soft.

    Add tomatoes, thyme, sugar, salt and pepper, breaking up tomatoes with back of spoon.

    Stir in string beans; simmer, covered, stirring occasionally, 25 to 35 minutes or until tender.

    (Can be made a day ahead and refrigerated.)

    Serve hot or warm.
