- 1 Tbsp. olive oil
- 4 medium onions, chopped (2 c.)
- 4 garlic cloves, chopped
- 1 (28 oz.) can plum tomatoes in thick puree or add tomato sauce to tomatoes
- 2 tsp. leaf thyme, crumbled
- 2 tsp. sugar
- 1/4 tsp. salt
- 4 tsp. pepper
- 2 lb. string beans, trimmed and halved or 50 oz. canned, drained
Directions

1Heat oil in Dutch oven over medium heat.

2Add onion and garlic. Cook, stirring occasionally, 8 minutes or until soft.

3Add tomatoes, thyme, sugar, salt and pepper, breaking up tomatoes with back of spoon.

4Stir in string beans; simmer, covered, stirring occasionally, 25 to 35 minutes or until tender.

5(Can be made a day ahead and refrigerated.)

6Serve hot or warm.
