  • 1/2-1pound striped bass/sea bass
  • flour
  • white or red cooking wine
  • lemon
  • butter
  • olive oil

Directions

    Remove skin

    Cut fish in to strips

    Dust with flour on both sides

    In a large frying pan add 1 tablespoon butter and add oil.

    Add fish.

    When the fish is golden on both sides add a heavy splash of wine.

    Cook for 1 more minute remove and squeeze lemon on top
