- 3 to 4 lb. beef roast
- 2 carrots
- 2 celery stalks
- 1 big onion
- salt and pepper
Directions

1Coat beef roast with flour and brown in oil.

2Pour off oil and add water and the rest of the ingredients.

3Bring to a boil and simmer until done, about 3 or 4 hours.

4Remove beef and vegetables from broth.

5Remove fat from broth, leaving about 1 quart broth. Add can undiluted mushroom soup.

6Mix and return to simmer. Return beef and vegetables to pot and heat until hot.

7Serve over sliced bread for open face sandwiches.
