- 4 avocados
- juice of 1 lemon
- 1 c. shelled, cooked shrimp
- salt and pepper
- 2 hard-cooked eggs, sliced
- a few drops Tabasco pepper sauce
- mayonnaise
Directions

1Be sure avocado is ripe (to test for ripeness, press at the rounded end, it should yield slightly).

2Cut in half, remove seed and immediately sprinkle with lemon juice to prevent discoloration.

3Mix shrimp, salt and pepper to fill avocado halves.

4Arrange egg slices on top.

5Top with a spoon of mayonnaise or sour cream.
