- 6 medium bell peppers
- 1/2 chopped onion
- 1 c. stewed tomatoes
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 lb. ground beef
- 1 Tbsp. shortening
- 1 c. rice, cooked
- 1 c. American cheese, grated
Directions

1Cut off top of peppers and remove seeds.

2Place in boiling water for 5 minutes.

3Cook ground beef and onion in shortening and drain.

4Add tomatoes, rice, salt and pepper; cover and simmer about 5 minutes.

5Remove from heat.

6Then fill peppers with mixture.

7Put peppers into baking dish.

8Bake at 350° for 25 minutes.

9Put grated cheese on top.
