Ingredients
- 4 each Bellpepper
- 1 box Uncle Ben's rice of your choice (I like wild)
- 1 each small onion, diced
- 1/2 cup mushrooms, chopped
- 1 can diced tomatoes
- 1 lb ground beef
- 1 salt (to taste)
- 1 black pepper (to taste)
- 6 quart water
- 1/2 stick butter
- 1 1/2 cup shredded cheese of your choice
Directions

1Preheat oven to 400

2Hollow out bellpepper by either cutting off top or slice length-wise and then deseed (I recommend slicing length-wise for better serving portions)

3Boil bellpeppers for 3 to 4 minutes in slightly salted water

4Remove bellpeppers and shock in an ice bath

5Saute onion and mushrooms in butter

6Prepare rice as box instructs

7Brown and drain ground beef

8Mix onion, mushrooms, rice, ground beef, and tomato together in a bowl while hot with 1/2 cup cheese

9Stuff bellpeppers with mix and top with remaining cheese.

10Place in oven for 10-12 minutes (until cheese is melted throughly
