Stuffed Cabbage Rolls

- 12 medium size cabbage leaves
- boiling water
- 3 c. chopped onion
- 4 Tbsp. butter or margarine
- 1 1/2 c. cooked rice
- 6 Tbsp. grated Romano or Parmesan cheese
- 1 1/2 tsp. salt
- 1/2 tsp. finely ground pepper
- 1 1/2 c. tomato juice
Directions

1Immerse cabbage leaves in boiling water for about 3 minutes; set aside to drain.

2Saute chopped cabbage and minced onion in butter until tender.

3Add rice, cheese, salt and pepper.

4Divide mixture among cabbage leaves.

5Fold in sides and roll to enclose filling; fasten with toothpicks.

6Place rolls in a single layer in a shallow saucepan.

7Add tomato juice; simmer for 20 minutes.
