Stuffed Chicken Rolls

- 6 chicken breasts, skinned (boneless)
- 1 c. fresh spinach leaves, stems trimmed
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. garlic powder (optional)
- 1 Tbsp. Parmesan cheese
Directions

1Place chicken breasts between plastic wrap and pound flat. Lightly sprinkle with salt and pepper (and garlic powder, as desired).

2Arrange spinach leaves overlapping on chicken, leaving approximately 1/4 to 1/2-inch on 3 sides to seal.

3Sprinkle lightly with Parmesan cheese.

4Roll up like egg rolls, tucking in sides to seal chicken.

5Tie with string or secure with poultry pins.

6Grill or broil, turning 4 times to get each side browned (approximately 10 to 15 minutes).

7Can also saute in lightly oiled pan for 10 to 15 minutes, turning to brown.
