Stuffed Crawfish Beignets

- 1/2 cup onions chopped
- 1/2 cup celery chopped
- 1/2 cup butter
- 1 tablespoon garlic minced
- 1 pound crawfish tails
- 1/4 cup cheddar cheese shredded
- 1/4 cup swiss cheese shredded
- 2 cups biscuit baking mix (bisquick)
Directions

1Saute onion and celery in butter until tender.

2Add garlic, seasoning and crawfish tails.

3Simmer 10 min or until all liquid evaporated.

4Set aside and let cool completely.

5Add cheese, green onions and parsley.

6Prepare dough.

7Beignet Dough-Stir biscuit mix and water with fork.

8On well floured surface roll out dough.

9Cut with 4 inch circle cutter.

10Place crawfish filling on half of dough.

11Fold circle in half, seal edges with fork dipped in flour.

12In deep pot, heat oil to 350F (180C).

13Fry beignets until golden brown.

14Serve warm.
