- 1 large eggplant
- 1 clove garlic, chopped fine
- 1 small onion, finely chopped
- 1 c. mushrooms, chopped
- 1/2 c. seasoned bread crumbs
- 1/2 c. marinara sauce
- Parmesan cheese
- 1 Tbsp. olive oil
Directions

1Split the eggplant lengthwise and hollow, leaving a 1-inch thickness with skin intact.

2Saute garlic and onions in oil; then add pieces of eggplant and mushrooms and cook until tender.

3Stir in bread crumbs and blend in marinara sauce.

4Fill the eggplant with this mixture; sprinkle with Parmesan cheese and bake for 30 minutes at 350°.
