- 1 medium eggplant
- 1/2 tsp. sage
- 1/2 tsp. garlic
- 3 eggs, beaten
- 1 pkg. stuffing mix
- 1/4 tsp. thyme
- 1 chopped onion
- 1 c. bread crumbs
Directions

1Cut top off eggplant and wash and prick with fork.

2Put in microwave for 5 minutes to soften.

3Let cool.

4Cut lengthwise down the middle.

5Scoop out seeds and pulp.

6Prepare stuffing.

7Add onion, eggs and herbs and mix well.

8Divide and fill two halves of eggplant.

9Brush with egg and coat with bread crumbs.

10Brush with oil or butter.
