  • 1/4 c. chopped onion
  • 1/4 c. butter
  • 1 small can mushrooms (save liquid)
  • 6 oz. pkg. frozen crabmeat
  • 1/2 c. saltines (coarse)
  • 1/2 tsp. salt
  • approximately 2 lb. flounder
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • milk
  • 1/3 c. white wine
  • 4 oz. shredded cheese
  • paprika

Directions

    Preheat oven to 400°.

    Cook onion in 1/4 cup butter until tender.

    Stir in mushrooms, crabmeat, crackers and parsley. Spread over fish and roll with seam side down.
