Stuffed Flounder Fillets

Ingredients
- 6 flounder or sole fillets
- 2/3 c. finely chopped celery
- 1 medium onion, finely chopped
- 2 Tbsp. butter
- 1 lb. shrimp, cooked and chopped
- 1/2 c. crab meat
- 1/2 c. seasoned bread crumbs
- 1 Tbsp. chopped parsley
- 1 egg, slightly beaten
- bread crumbs, buttered
- grated Parmesan cheese
Directions

1Wash fillets; drain well on paper towels.

2Saute celery and onion in butter.

3Add shrimp, crab meat, bread crumbs, parsley and egg; mix.

4Spread on fish fillets.

5Roll up; place in lightly greased baking dish.

6Pour white wine sauce over fillets.

7Top with bread crumbs, Parmesan cheese and additional chopped parsley. Refrigerate overnight at this point, if desired.

8Bake at 350° for 30 minutes.
