  • 2 lb. very lean ground lamb or beef
  • 4 c. burghul (cracked wheat), washed and drained
  • 1 tsp. black pepper
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 lb. coarsely ground lamb or beef
  • 5 onions, chopped
  • 1 c. Crisco
  • 1 tsp. salt
  • 1 tsp. cumin powder
  • 1 tsp. pepper
  • 1/2 to 1 c. pine nuts

    Mix the first 5 ingredients very well and grind again.

    Soften the mixture by adding 2 or 3 tablespoons ice water and kneading it well.
