  • 12 manicotti shells
  • 1 1/2 lb. Ricotta or cottage cheese
  • 1/2 lb. shredded Mozzarella cheese
  • 1 Tbsp. chopped parsley
  • 2 Tbsp. sugar
  • 1 egg, slightly beaten
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 lb. ground beef
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 clove garlic, crushed
  • 32 oz. jar spaghetti sauce with mushrooms
  • 1/2 c. water
  • 1/3 c. grated Parmesan cheese

    Cook pasta in salted boiling water.

    Gently drain and remove from water.

    Don't overcook or they will split and fall apart. Mix Ricotta, Mozzarella, parsley, sugar, egg, 1/2 teaspoon salt and 1/2 teaspoon pepper.

    Fill shells with this mixture.

    Brown ground beef with remaining salt and pepper.

    Drain.

    Add garlic, spaghetti sauce and water.

    Simmer 5 minutes.

    Cool.

    Pour 1/2 sauce mixture in baking dish; top with filled shells.

    Pour remaining sauce over all.

    Bake for 30 minutes in a 400° oven. Sprinkle with Parmesan about 5 minutes before done.
