Stuffed Manicotti Shells

  • 1 (8 oz.) pkg. manicotti shells
  • 1 small onion, chopped
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 Tbsp. instant chicken bouillon
  • 1/2 tsp. garlic powder
  • 1/8 tsp. dried thyme leaves
  • 1 1/2 c. creamed cottage cheese
  • 2 eggs
  • 1/4 c. grated Parmesan cheese
  • 1 (8 oz.) can tomato sauce
  • 1 c. shredded Mozzarella cheese

Directions

    Cook manicotti shells as directed on package; drain.

    Mix onion, spinach, bouillon, garlic powder, thyme, cottage cheese, eggs and Parmesan cheese.

    Fill manicotti shells with spinach mixture; arrange in a greased oblong pan, 13 x 9-inches.

    Pour tomato sauce over manicotti; sprinkle with Mozzarella cheese. Cover and cook in a 350° oven until hot and bubbly, about 25 minutes.
