Stuffed Meat Roll

Ingredients
- 2 beaten eggs
- 3/4 c. bread crumbs
- 1/2 c. tomato juice
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 clove garlic, minced
- 2 lb. extra lean ground beef
- 8 thin slices boiled ham
- 6 oz. shredded Mozzarella
- 1 can mushrooms
- 1 onion, chopped
Directions

1Combine the first 8 ingredients; mix well.

2On foil or wax paper, pat meat to about a 12 x 10-inch rectangle.

3Arrange ham slices on top.

4Sprinkle cheese, onion and mushrooms on top of ham. Carefully roll up meat, using foil to lift.

5Seal edges and ends. Place roll, seam down, in baking dish.

6Bake at 350° for 75 minutes, or until done.

7Makes 8 servings.
