Stuffed Mushrooms

  • 2 large baskets fresh whole mushrooms
  • 1/2 stick butter
  • 6 green onions, finely chopped
  • mushroom stems (from whole mushrooms), finely chopped
  • 1 (4 oz.) pkg. cream cheese
  • 1 pkg. Monterey Jack cheese
  • 1 pkg. grated Cheddar cheese
  • 10 slices bacon, fried crisp and broken in small pieces
  • 4 oz. sour cream

Directions

    Remove stems from mushrooms; wash caps and drain.

    Microwave caps until tender and drain all water.

    Saute chopped onions and mushroom stems in butter until tender; drain and mix with melted cheeses.

    Add sour cream and prepared bacon; salt and pepper to taste.

    Stuff in caps and eat immediately.
