Stuffed Mushrooms

  • 1 lb. medium sized mushrooms
  • 1 small onion, chopped fine
  • 2 cloves garlic, minced
  • 2 to 3 Tbsp. olive oil
  • 1 egg, beaten
  • 1 c. seasoned bread crumbs
  • 1/2 c. Parmesan cheese
  • 2 tsp. parsley
  • 2 tsp. soy sauce
  • 4 to 6 Tbsp. water

    Wash mushrooms; remove stems and set aside caps.

    Brown onion and garlic in olive oil.
  3. 3
    Finely chop mushroom stems.

    Add to onion and garlic and brown over low heat.
  5. 5
    Combine onion, stems, egg, bread crumbs, cheese and parsley and mix.

    Stuff mushroom caps with mixture.

    Place mushrooms in baking dish or pan with soy sauce and water on bottom, cover with foil and bake at 350° for 10 to 15 minutes.

    Uncover and continue baking until golden brown.
