- 1 pound Lean Ground Beef
- 2 bags Instant Rice
- 1 whole Bell Pepper
- 1/4 cups Diced Onion (about Half An Onion)
- 1 can To 2 Cans Diced Tomatoes
- 8 ounces, weight Velveeta Cheese
- 1 pinch Salt
- 1 pinch Ground Black Pepper
Directions

1Preheat oven to 350 degrees.

2Chop one whole bell pepper and half an onion.

3Begin browning ground beef in a skillet.

4Add in bell pepper and onion once pan is thoroughly heated.

5Bring water to boil for instant rice.

6Prepare rice as directed on package.

7Set aside.

8Once meat is done, drain and stir in 1 to 2 cans of diced tomatoes.

9Season with salt and pepper to taste.

10Cut 8 ounces of Velveeta into cubes and stir into the meat mixture to melt.

11Add in cooked rice and stir to combine.

12Place all ingredients into an oven safe dish and bake for 20 to 30 minutes until heated through.
