Stuffed Peppers

- 6 large peppers
- 1/4 c. vegetable oil
- 1/2 c. chopped onions
- 1 clove garlic, finely chopped
- 3/4 lb. ground beef
- 3/4 c. Parmesan cheese
- 2 c. cooked rice
- 3 Tbsp. parsley
- salt and pepper to taste
- 1 c. spicy hot V-8 vegetable juice
Directions

1Cut tops from peppers and remove seeds.

2Place in boiling water for 3 minutes.

3Remove and drain.

4Rub outside with oil. Brown beef in skillet with oil, onion and garlic.

5Pour off any grease.

6Mix with rest of ingredients and stuff peppers.

7Bake 25 minutes at 300°.

8Serves 6.
