Stuffed Peppers

  • 6 large peppers
  • 1/4 c. vegetable oil
  • 1/2 c. chopped onions
  • 1 clove garlic, finely chopped
  • 3/4 lb. ground beef
  • 3/4 c. Parmesan cheese
  • 2 c. cooked rice
  • 3 Tbsp. parsley
  • salt and pepper to taste
  • 1 c. spicy hot V-8 vegetable juice

Directions

    Cut tops from peppers and remove seeds.

    Place in boiling water for 3 minutes.

    Remove and drain.

    Rub outside with oil. Brown beef in skillet with oil, onion and garlic.

    Pour off any grease.

    Mix with rest of ingredients and stuff peppers.

    Bake 25 minutes at 300°.

    Serves 6.
