Stuffed Peppers

Ingredients

  • 6 medium-sized bell peppers
  • 2 lb. ground beef (I prefer ground round)
  • 2 eggs
  • 2 c. Pepperidge Farm herb seasoned stuffing
  • 1/2 c. rice
  • 1 Tbsp. finely diced onion
  • 1/4 tsp. salt
  • 2 qt. spaghetti sauce (homemade or store-bought)

Directions

    Cut out tops of bell peppers.

    Wash peppers.

    Set aside to drain.

    Mix ground beef, eggs, stuffing, rice, onion and salt together thoroughly.

    Fill peppers with ground beef mixture. Place peppers in pan.

    Pour spaghetti sauce over peppers.

    Cook slowly for 6 to 8 hours.

    I cook mine in a slow cooker.
