- 4 large green peppers
- 2 Tbsp. butter
- 3 Tbsp. minced onion
- 1 lb. ground beef
- 1/2 c. precooked instant rice
- 1/2 tsp. salt
- 2 (8 oz.) cans tomato sauce
- 1/2 c. water
- 1/2 c. dry white wine
- 1/4 lb. sharp Cheddar cheese, grated
- 3 Tbsp. celery, chopped
Directions

1Split peppers lengthwise; remove seed and stems. Wash and drop into a large pot of boiling salted water. Turn off heat and let stand for 5 minutes; drain. Arrange in baking dish. Saute onion and celery in butter for 5 minutes. Mix onion, celery, beef, rice, salt and 1 can of tomato sauce. Fill peppers with meat mixture. Combine 1 can tomato sauce with water and wine; pour over peppers. Bake at 350° for 40 minutes. Sprinkle with cheese and bake 20 minutes longer. Serves 8.
