  • 6 green bell peppers
  • 1 c. cold cooked/browned ground beef
  • 1 c. chopped tomatoes
  • 1 c. boiled rice
  • 2 Tbsp. butter or margarine
  • 1 tsp. chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. peas and/or diced carrots (if desired)

Directions

    Preheat oven to 400°. Wash peppers. Cut a slice from stem end and remove all white pulp and seeds. Mix all other ingredients and place this stuffing into the peppers. Place peppers in baking dish. Add 1 cup HOT water in bottom of dish. Bake in preheated oven for 35 minutes or until peppers are tender.
