Stuffed Peppers

- 7 to 8 peppers
- 1 lb. ground beef
- 1/2 tsp. salt
- dash of pepper
- 1 egg
- 1 small chopped onion
- 1 can tomato soup
- 1 c. cubed Velveeta cheese
- 1 c. cooked rice
- 4 Tbsp. water or little more
Directions

1Parboil peppers for 5 or so minutes.

2Drain.

3Brown beef with onion, salt and pepper; drain.

4Remove from heat.

5Add 1/2 can soup, egg, cheese and rice.

6Stuff peppers with mixture, or layer with peppers in baking dish.

7Mix remaining soup and water; pour over peppers.

8Bake at 350° for 30 minutes.
