  • 4 medium bell peppers
  • 2 c. cooked and drained ground beef
  • 3/4 c. soft bread crumbs
  • 1/2 tsp. salt
  • 1 egg, slightly beaten
  • 2 Tbsp. onion, finely chopped
  • 1 can cream of tomato soup

Directions

    Steam peppers 5 minutes.

    Combine remaining ingredients, reserving 1/2 can of soup.

    Mix well.

    Fill peppers with stuffing mix.

    Bake in shallow pan at 375° for 30 minutes.

    Pour remaining soup over peppers.

    Return to oven.

    Bake 15 minutes.
