- 4 large peppers
- 12 oz. ground turkey
- 1 c. finely chopped onions
- 1 tsp. dried oregano
- 1 1/2 c. cooked rice
- 1/4 c. cooked Parmesan cheese
- 1/4 c. fat-free egg
- 1 c. tomato sauce
Directions

1Cut peppers in half lengthwise.

2Remove seeds, blanch in boiling water for 3 minutes.

3Drain.

4Brown turkey, onions and oregano.

5Stir in rice, Parmesan, eggs and 1/2 cup tomato sauce. Stuff in peppers.

6Arrange in 9 x 13-inch baking dish.

7Top with remaining tomato sauce.

8Microwave 12 minutes.

9Rearrange peppers once during cooking.

10Serves 4.
