- 6 large green peppers
- 1 Tbsp. bacon drippings or melted shortening
- 1 c. cooked rice
- 1 small onion, minced
- 1/8 tsp. black pepper
- 1 lb. ground beef
- 1 can chopped tomatoes
- 1/2 tsp. salt
- 3 Tbsp. grated sharp cheese
Directions

1Cut thin slices from stem end of pepper.

2Remove seeds. Parboil in 1 cup boiling water with 1 1/2 teaspoons of salt, about 5 or 6 minutes.

3Drain.

4Brown beef in bacon drippings or shortening.

5Simmer tomatoes, juice and onion until onion is tender, about 5 minutes.

6Stir occasionally.
