Stuffed Peppers

- 2 lb. ground beef (lean)
- 1 large onion, diced
- 5 large green peppers, 1/2 c. diced and others halved
- 1 egg
- 1/2 c. oatmeal
- 1/2 c. tomato sauce
- salt and pepper to taste
- sharp cheese, sprinkled over top (optional)
Directions

1Combine ground beef, onion, 1/2 cup peppers, egg, oatmeal, tomato sauce, salt and pepper.

2Shape into balls and press into green peppers that have been cut in half lengthwise.

3Bake in a 350° oven in a deep dish casserole until brown on top, about 1 hour.

4Can be topped with grated cheese when almost done.

5I don't usually cover the casserole, but you can until the last 1/2 hour for more juicy peppers.

6For more variety, you can add 1/2 cup of cooked rice to the meat mixture.
