- 6 green peppers
- 3/4 chopped onions
- 1 c. sauteed sliced mushrooms
- 1 1/2 c. cooked rice
- salt
- pepper
- 2 Tbsp. butter
- 1 can tomato juice
Directions

1Preheat the oven to 325°.

2Put the peppers in a pan with cold water to cover.

3Bring slowly to a boil, then drain.

4Cut off the tops of the peppers and scoop out the seeds.

5Blend together the chopped onion, mushrooms, the cooked rice, salt and pepper.

6Fill each pepper with this mixture and dot with butter.

7Pour the tomato juice over the stuffed peppers.

8Bake 25 minutes.
