Stuffed Peppers

  • 6 green peppers
  • 3/4 chopped onions
  • 1 c. sauteed sliced mushrooms
  • 1 1/2 c. cooked rice
  • salt
  • pepper
  • 2 Tbsp. butter
  • 1 can tomato juice

Directions

    Preheat the oven to 325°.

    Put the peppers in a pan with cold water to cover.
  3. 3
    Bring slowly to a boil, then drain.
  4. 4
    Cut off the tops of the peppers and scoop out the seeds.
  5. 5
    Blend together the chopped onion, mushrooms, the cooked rice, salt and pepper.

    Fill each pepper with this mixture and dot with butter.

    Pour the tomato juice over the stuffed peppers.

    Bake 25 minutes.
