*Stuffed Peppers

Ingredients
- 1 1/2 lb. ground beef
- 6 to 8 large peppers
- 1/2 c. rice, uncooked
- 1 onion, chopped
- 1 small can tomato sauce
- 2 1/2 c. water
- 2 Tbsp. butter
- 2 to 3 Tbsp. tomato paste
- 1/2 tsp. oregano
- salt and pepper to taste
Directions

1Brown meat lightly in butter.

2Add onion to meat and saute until onion is soft.

3Stir in seasonings and rice.

4Add 1/2 can of tomato sauce and 1/2 cup water.

5Simmer for 5 minutes.

6Cut tops off peppers.

7Clean and remove seeds and membranes.

8Stuff peppers with meat and rice mixture and place in a baking dish.

9Combine remaining tomato sauce, tomato paste and remaining water.

10Cover tops of peppers with some sauce and pour remainder into the baking dish.

11Bake, covered, in a 350° oven for 30 minutes.

12Uncover and bake for an additional 30 minutes.

13Add additional water, if necessary.
