  • 2 Bell peppers
  • 1 lb Ground beef
  • 1/2 cup Quinoa
  • 1 cup Shredded sharp cheddar cheese
  • 1 tbsp Olive oil
  • 1/2 can Black beans

    Preheat oven to 375

    Cut peppers in half, clean out seeds

    Lay on cookie sheet and brush inside and outside with olive oil

    Bake until tender

    Brown ground beef.

    Season with salt and pepper to taste

    Mix cooked quinoa into ground beef along with black beans

    Scoop mixture evenly into peppers

    Top with cheese
