Stuffed Peppers

- 3/4 c. Minute rice
- 1 c. diced cooked meat
- 1 c. cooked tomatoes
- 2 Tbsp. chopped onion
- 1/2 c. water
- 1/2 tsp. salt
- dash of pepper
- 4 green peppers
Directions

1Combine Minute rice, cooked meat, tomatoes, chopped onion, water, salt and pepper.

2Cut green peppers lengthwise.

3Fill with rice mixture.

4Place in skillet with tomatoes around the peppers (I use 1 quart tomatoes, 1 cup in filling and the remainder in skillet).

5Cover and cook 20 minutes or until peppers are tender. Serves 4.
