- 4 green peppers
- 1 1/2 c. cooked rice
- 1/4 c. chopped onion
- 8 oz. pork sausage or ground beef
- 8 oz. shredded mild Cheddar cheese
- 1 medium tomato, chopped
Directions

1Preheat oven to 375°.

2Remove tops, seeds and membranes from peppers.

3Brown meat in skillet; cook with onion.

4Drain excess fat.

5Stir in rice, tomato and 1 1/2 cups cheese.

6Fill peppers with meat mixture, topping with remaining cheese.

7Arrange in 9-inch square baking dish.

8Add 1/4 cup water to pan.

9Bake 30 minutes or until peppers are tender.
