- 6 medium green peppers
- 1 1/2 lb. ground beef
- 1 small onion, chopped (1/2 c.)
- 1 c. cooked rice
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 clove garlic, minced
- 1 (10 oz.) can condensed tomato soup
- 1/2 c. water
- 2 c. grated cheese
Directions

1Cut tops off green peppers; remove seeds and membrane.

2Cook peppers in enough boiling water to cover for 5 minutes; drain.

3In medium skillet on range top, cook and stir ground beef and onion until onion is tender.

4Drain off fat.

5Stir in rice, salt, pepper and garlic.

6Divide evenly into peppers.

7Arrange peppers upright in dish.

8Blend soup and water until smooth; pour over peppers. Cover.

9Bake at 350° for 45 minutes to 1 hour.

10Sprinkle with cheese.

11Re-cover; let stand 5 to 10 minutes to melt cheese.
