- 1 lb. ground beef
- 1 beef bouillon cube
- 1 pkg. Minute Spanish rice mix
- 1 (8 oz.) can tomato sauce
- 2 1/4 c. water
- 2 Tbsp. butter
- 4 medium bell peppers
- grated cheese
Directions

1Brown beef in large skillet over low heat.

2Stir occasionally. Add 2 cups water, bouillon cube and butter.

3Bring to full boil, stirring constantly.

4Stir in Spanish rice mix.

5Cover and remove from heat.

6Let stand 20 minutes.

7Meanwhile, cut peppers in half, lengthwise.

8Remove seeds and simmer in boiling salted water 10 minutes.

9Fill peppers with rice mixture and place in shallow baking dish.

10Mix tomato sauce with remaining water and pour over rice.

11Top with cheese and heat under broiler.
