Stuffed Pizza Omelet

  • 1 teaspoon vegetable oil
  • 4 eggs large, beaten
  • 1/2 cup broccoli florets cooked and coarsely chopped
  • 1/2 cup shredded low-fat mozzarella cheese about 2 oz.
  • 1/2 cup Ragu(R) Old World Style(R) Pasta Sauce

    In 10-inch nonstick skillet, heat oil over medium-low heat and add eggs. With spatula, lift set edges of omelet, tilting pan to allow uncooked mixture to flow to bottom. When omelet is set and slightly moist, evenly sprinkle with broccoli, 1/3 cup cheese and 1/4 cup Pasta Sauce. Fold in half, then top with remaining cheese and Pasta Sauce. Reduce heat to low and cook covered 5 minutes or until omelet is set and cheese is melted.
