Stuffed Potato Shells

- 5 to 7 lb. red potatoes
- 1 (1 lb.) box large shells
- 6 to 8 chopped onions
- 4 sticks butter
- 16 oz. grated Cheddar cheese
Directions

1Cook shells.

2Drain and rinse.

3Peel potatoes and boil and mash (no milk) with 1 stick butter, add cheese.

4Saute onions in 3 sticks butter for 15 minutes.

5Spread 1/2 of onions into 9 x 13-inch pan.

6Place shells stuffed with potato mixture in pan. Cover with remaining onion.

7Cover with foil tightly.

8Bake at 350° for 20 minutes.
