  • 5 to 7 lb. red potatoes
  • 1 (1 lb.) box large shells
  • 6 to 8 chopped onions
  • 4 sticks butter
  • 16 oz. grated Cheddar cheese

    Cook shells.

    Drain and rinse.

    Peel potatoes and boil and mash (no milk) with 1 stick butter, add cheese.

    Saute onions in 3 sticks butter for 15 minutes.

    Spread 1/2 of onions into 9 x 13-inch pan.

    Place shells stuffed with potato mixture in pan. Cover with remaining onion.

    Cover with foil tightly.

    Bake at 350° for 20 minutes.
