Stuffed Potatoes

  • 4 large potatoes
  • 1/4 lb. bacon, chopped
  • 1 medium onion, minced
  • 1 tsp. prepared mustard
  • 1 egg, beaten
  • 1/2 c. grated cheese
  • salt
  • pepper
  • paprika

Directions

    Bake potatoes in a 400° oven for 1 1/2 hours or until soft. Cut in half and scoop out flesh.

    Fry bacon for 5 minutes; add onion and cook another 5 minutes.

    Mash the potatoes and add bacon, onion, mustard, egg, cheese, salt and pepper to taste.

    Mix well. Fill the potato skins with mixture and sprinkle with paprika. Serves 4 to 8.
