- 4 large potatoes
- 1/4 lb. bacon, chopped
- 1 medium onion, minced
- 1 tsp. prepared mustard
- 1 egg, beaten
- 1/2 c. grated cheese
- salt
- pepper
- paprika
Directions

1Bake potatoes in a 400° oven for 1 1/2 hours or until soft. Cut in half and scoop out flesh.

2Fry bacon for 5 minutes; add onion and cook another 5 minutes.

3Mash the potatoes and add bacon, onion, mustard, egg, cheese, salt and pepper to taste.

4Mix well. Fill the potato skins with mixture and sprinkle with paprika. Serves 4 to 8.
