- 6 large baking potatoes
- 1 pt. sour cream
- 2 c. Cheddar cheese
- small bunch of chopped spring onions
- 1 stick melted butter
Directions

1Bake potatoes until done.

3hot, cut in half lengthwise and scoop out potato, leaving skins intact.

4Mix potato with butter, sour cream, 1 1/2 cups of the cheese and onions.

5If necessary, thin with more sour cream.

6Add salt and pepper to taste.

7Place mixture back in skins.

8Top with remaining cheese and reheat until cheese melts.
