  • 1 tablespoon oil
  • 8 prawns peeled, deveined and chopped
  • 1 lemon 1/2 juiced, 1/2 cut into wedges to garnish
  • 1 mango ripe, about 1 1/4 lb, peeled, pitted and diced
  • 1/2 vanilla bean seeds scraped out

Directions

    Heat oil in a frying pan and saute prawns for 2-3 mins. Add 1 tbsp lemon juice and season. Transfer to a bowl, add mango and vanilla bean seeds and season. Serve garnished with lemon wedges.
