- 12 quahogs, steamed open (save broth)
- 1 lb. chourico, peeled and chopped (or buy ground)
- 4 medium onions, minced
- 2 loaves Portuguese bread, torn into small pieces
- chopped parsley
- 1/4 tsp. pepper
- dash of red pepper for zip (optional)
Directions

1Heat oven to 350°.

2Steam quahogs.

3Put bread pieces in a bowl and soak in clam broth from quahogs until soggy.

4Fry onions and chourico; simmer 20 minutes.

5Add mixture to bread in a large bowl and mix well.

6Add spices.

7Mix and put into a 9 x 13-inch roasting pan.

8Bake for 20 minutes.

9Cool.

10Stuff shells (open) and sprinkle with parsley.

11Bake for another 30 minutes.
