Stuffed Salmon Fillets

  • 6 salmon fillets (about 5 oz. each)
  • 1 (10 oz.) pkg. baby spinach, coarsely chopped
  • 3 Tbsp. prepared pesto
  • 1 Tbsp. chopped sun-dried tomatoes
  • 1 Tbsp. pine nuts

Directions

    Heat oven to 400°.

    Make a slit 2/3 of the way through the center of each fillet; do not cut through fillet.

    Season each fillet with salt and pepper.

    In bowl, combine spinach, pesto, sun-dried tomatoes and pine nuts.

    Spoon 1/3 cup mixture into each slit.

    Arrange fillets on broiler pan coated with cooking spray. Roast 8 to 10 minutes or until spinach mixture is heated through. Makes 6 servings.
