Ingredients

  • 1 1/2 c. skimmed Ricotta cheese
  • parsley
  • 9 oz. nonfat Mozzarella cheese
  • 2 c. chopped zucchini
  • 2 cans tomato sauce
  • 1 can whole tomatoes
  • onion, mushrooms, garlic powder and bay leaf
  • pepper

Directions

    Cook shells (18) and drain.

    While shells are cooking, combine the Ricotta cheese with the parsley.

    In a saucepan, cook the zucchini, tomato sauce, tomatoes, onion, mushrooms, garlic powder and bay leaf.

    Spray a 9 x 13-inch pan and fill shells with Ricotta mixture.

    Pour sauce over shells and top with Mozzarella cheese.

    Cover with foil and bake for 25 minutes at 350°.

    Uncover and bake an additional 15 minutes.
