Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 1 1/2 c. yogurt cheese*
  • 2 egg whites
  • 1 medium onion, chopped
  • 1 (8 oz.) pkg. low-fat Mozzarella, grated
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1/2 tsp. nutmeg
  • 2 beef bouillon cubes
  • 1 c. water
  • 1 (32 oz.) jar spaghetti or pizza sauce
  • 1 (7 oz.) pkg. pasta shells or manicotti

Directions

    Thaw spinach and squeeze as dry as possible.

    Mix with yogurt cheese, egg whites, onion, 4 ounces Mozzarella cheese and spices. Cook pasta according to package directions.

    Stuff shells or manicotti with spinach mixture.

    Put in 11 x 14-inch casserole dish sprayed with nonstick baking spray.

    Cover with sauce, which has been diluted with water.
