- 2 lb. Ricotta cheese
- 1 lb. Mozzarella cheese, diced
- 2 eggs
- 2 Tbsp. chopped parsley
- 1/2 c. grated cheese*
- salt and pepper to taste
- jumbo shells
Directions

1Parboil shells for about 10 minutes; drain.

2Mix together Ricotta, Mozzarella, eggs, grated cheese and parsley.

3Add salt and pepper to taste. Stuff shells using a knife or teaspoon. Cover bottom of a baking dish with sauce.

4Arrange shells in a single layer, cover with sauce.

5Bake at 350° for about 30 minutes.
