Ingredients

  • 2 lb. Ricotta cheese
  • 1 lb. Mozzarella cheese, diced
  • 2 eggs
  • 2 Tbsp. chopped parsley
  • 1/2 c. grated cheese*
  • salt and pepper to taste
  • jumbo shells

Directions

    Parboil shells for about 10 minutes; drain.

    Mix together Ricotta, Mozzarella, eggs, grated cheese and parsley.

    Add salt and pepper to taste. Stuff shells using a knife or teaspoon. Cover bottom of a baking dish with sauce.

    Arrange shells in a single layer, cover with sauce.

    Bake at 350° for about 30 minutes.
