Stuffed Spaghetti Squash

Ingredients

  • 1 spaghetti squash, cut in half
  • 1 3/4 c. chopped fresh zucchini
  • 1/4 c. tomato juice
  • 1/4 tsp. dried oregano or 1 tsp. fresh chopped oregano
  • 1 (15 oz.) can black beans, drained and rinsed
  • 2 large cloves garlic, minced
  • salt and pepper to taste

    Place the squash, cut side down, in a baking dish and add 1/2-inch of water.

    Bake in a preheated 350° oven for 30 minutes or until the squash is fork-tender.

    Place the halves on a plate. Fluff the strands with a fork. During the last 10 minutes of baking time, heat the zucchini, tomato juice, oregano, beans, garlic, salt and pepper in a medium saucepan. Spoon the mixture into the spaghetti squash halves and toss lightly.
