- 12 medium squash
- 1 lb. ground beef
- 1 c. long grain rice (uncooked)
- 1 medium onion
- 2 cans tomato paste
- 1 tsp. salt or to taste
- 1 tsp. pepper or to taste
Directions

1Cut necks off squash and core inside out and save.

2Mix all ingredients except 1 can tomato paste and squash hulls.

3Stuff squash loosely; put neck in top and secure with toothpick.

4Cover with water and add 1 can tomato paste.

5Bring to a boil and simmer 1 hour.
