Stuffed Summer Squash

Ingredients

  • 6 yellow squash
  • 1 onion, chopped
  • 6 Tbsp. cracker crumbs
  • 1/3 c. Cheddar cheese, grated
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. sugar
  • 1/4 c. mayonnaise
  • 1 egg, beaten
  • 1 Tbsp. oleo

Directions

    Simmer squash in salted water until tender.

    Slice in half lengthwise and scoop out inside, leaving shells intact.

    Drain and mash squash meat with remaining ingredients and stuff into shells. Sprinkle with additional cheese.

    Bake at 350° for 30 minutes.
