- 6 baking potatoes
- 1/2 lb. chop meat
- 1 pkg. dry taco seasoning mix
- 1 onion
- 1 pt. sour cream
- 1 c. American cheese or Cheddar
- 1/4 c. chopped chives
Directions

1Bake potatoes at 350° for 1 hour.

2Let cool, cut into halves and scoop out insides, leaving skins intact.

3Fry chopped onions and chop meat.

4Drain fat and prepare with taco mix, following package directions.

5Add scooped out potatoes (insides) to meat. Re-fill potato skins with mixture.

6Bake again the filled skins for 15 minutes.

7Remove and top with cheese.

8Return to oven for 5 minutes or until cheese melts, then top with sour cream and chives.
