Ingredients

  • 6 baking potatoes
  • 1/2 lb. chop meat
  • 1 pkg. dry taco seasoning mix
  • 1 onion
  • 1 pt. sour cream
  • 1 c. American cheese or Cheddar
  • 1/4 c. chopped chives

Directions

    Bake potatoes at 350° for 1 hour.

    Let cool, cut into halves and scoop out insides, leaving skins intact.

    Fry chopped onions and chop meat.
  4. 4
    Drain fat and prepare with taco mix, following package directions.

    Add scooped out potatoes (insides) to meat. Re-fill potato skins with mixture.

    Bake again the filled skins for 15 minutes.

    Remove and top with cheese.

    Return to oven for 5 minutes or until cheese melts, then top with sour cream and chives.
